Creamy Comfort Soup (Print Version)

# Ingredients:

01 - ½ cup shredded Parmesan cheese.
02 - ½ teaspoon oregano, dried.
03 - 1 can (14.5 oz) diced tomatoes, without liquid.
04 - 2 quarts chicken broth.
05 - 1 pound sausage, casing removed.
06 - ½ cup heavy whipping cream.
07 - Salt and pepper, adjust to your taste.
08 - Fresh parsley, chopped, to finish.
09 - ½ teaspoon dried basil.
10 - 1 tablespoon olive oil for cooking.
11 - 2 garlic cloves, finely chopped.
12 - 1 small onion, diced.
13 - 1 cup smaller-shaped pasta, like elbows or ditalini.

# Instructions:

01 - Warm up olive oil over medium heat in a large pot. Lightly fry the sausage while crumbling it up, then take it out of the pot.
02 - Toss in onion and garlic into the same pot. Sauté them until they're soft and smelling lovely.
03 - Mix in the tomatoes, stock, basil, and oregano. Stir everything, then add the cooked sausage back in.
04 - Let the mixture simmer, then throw in the pasta. Cook it until it softens but still has a little bite.
05 - Lower the heat and gently stir in the cream and Parmesan. Let the cheese melt and season with salt and pepper.
06 - Scoop into bowls and sprinkle parsley on top before enjoying.

02 - The pasta will soak up more liquid if it sits for too long.
