Shrimp & Crab Bisque (Print Version)

# Ingredients:

→ Seafood

01 - 8 oz crab, picked clean
02 - 8 oz cooked shrimp, chopped

→ Base

03 - 4 tbsp unsalted butter
04 - 1/3 cup finely diced celery
05 - 1/3 cup green onions, sliced
06 - 2 cups whole milk
07 - 1 1/2 cups heavy whipping cream
08 - 3 tbsp all-purpose flour
09 - 1 tbsp tomato paste

→ Seasonings

10 - Old Bay Seasoning, 1 tsp
11 - Salt and black pepper, adjust to taste
12 - Fresh parsley, chopped for garnish

# Instructions:

01 - In a large pan, melt your butter on medium-high heat. Toss in the celery and green onions, letting them soften as they cook.
02 - Mix in the flour and stir continuously for about a minute. At the same time, start warming the milk in a different pan.
03 - Once the milk is warm, pour it into the pan with veggies and flour, whisking the mixture until smooth. Season it with Old Bay, a pinch of salt, some pepper, the cream, and tomato paste. Keep whisking everything together.
04 - Turn the heat down and let it simmer gently until the soup starts to thicken.
05 - Mix in the shrimp and crab meat, letting it warm up completely. Sprinkle chopped parsley on top before serving.
