Honey-Soy Cod (Print Version)

# Ingredients:

→ Sauce

01 - 1 teaspoon rice vinegar
02 - 1 teaspoon sesame oil
03 - 2 tablespoons soy sauce
04 - 1 teaspoon minced garlic
05 - 1/2 teaspoon sesame seeds
06 - 1/2 teaspoon finely chopped fresh ginger
07 - 2 tablespoons honey

→ Fish and Garnish

08 - 1 tablespoon diagonally sliced green onions
09 - 2 pieces of cod (each about 5-6 oz)

# Instructions:

01 - In a small bowl, combine honey, soy sauce, sesame oil, vinegar, garlic, ginger, and sesame seeds.
02 - Dry off cod filets with a paper towel, then set them into a glass dish. Coat with a tablespoon of sauce, cover, and chill in the fridge for 30 minutes or up to 2 hours. Save the rest of the sauce for later.
03 - Adjust the oven rack to be near the top and set the broiler to low. Lay parchment paper on a baking pan and place the fish on top.
04 - Cook under low heat for 12 to 14 minutes, adding more sauce every few minutes. For the last 4-5 minutes, turn the broiler to high until golden and the fish reaches 135-140°F inside.
05 - Move the cooked fish to plates and sprinkle with the sliced green onions.

# Notes:

01 - Halibut, black cod, rockfish, haddock, or lingcod work as great substitutes for cod.
02 - You can swap honey with brown sugar or maple syrup.
03 - Make double the sauce if you want extra to drizzle when serving.
