In a small bowl, combine honey, soy sauce, sesame oil, vinegar, garlic, ginger, and sesame seeds.

Dry off cod filets with a paper towel, then set them into a glass dish. Coat with a tablespoon of sauce, cover, and chill in the fridge for 30 minutes or up to 2 hours. Save the rest of the sauce for later.

Adjust the oven rack to be near the top and set the broiler to low. Lay parchment paper on a baking pan and place the fish on top.

Cook under low heat for 12 to 14 minutes, adding more sauce every few minutes. For the last 4-5 minutes, turn the broiler to high until golden and the fish reaches 135-140°F inside.

Move the cooked fish to plates and sprinkle with the sliced green onions.
