Toss the chicken pieces into a big mixing bowl. Mix them with olive oil, smoked paprika, salt, onion powder, garlic powder, and pepper. Stir well to make sure every piece gets coated. Let it sit for at least half an hour, so it soaks up the flavors.

Slide the marinated chicken onto skewers, leaving a bit of space between each one.

Combine mayonnaise, sweet chili sauce, Sriracha, and lime juice in a small dish. Stir it until smooth and creamy. Save half of this mix for dipping later.

Use some of the sauce to brush over the skewered chicken pieces before cooking.

Heat your grill or griddle pan on medium-high. Lay the skewers down and cook for around 6–8 minutes. Flip them, add more sauce, and cook for another 8 minutes or until they're cooked through, reaching 165°F inside.

Move the grilled skewers onto a serving dish. Drizzle the leftover sauce on top, and sprinkle parsley and lime wedges to finish.
