Simple Garlic Chili Bok Choy (Print Version)

# Ingredients:

→ Main

01 - 1 pound of either baby bok choy, regular bok choy, yu choy sum, cabbage, or baby gai-lan
02 - 1 tablespoon of a neutral oil like vegetable oil
03 - 8 garlic cloves, finely chopped
04 - 1/3 cup water

→ Spicy Sauce

05 - 1 and 1/2 tablespoons of chili crisp or chili oil
06 - 1 tablespoon of standard soy sauce
07 - Half a tablespoon of Shaoxing wine, chicken broth, or dry sherry
08 - 1 teaspoon of sesame oil
09 - A small pinch (1/4 teaspoon) of white sugar

# Instructions:

01 - Cut the baby bok choy into halves. Wash thoroughly in cold water and let it drain completely.
02 - Mix all the ingredients for the spicy sauce in a tiny bowl and leave it aside for now.
03 - Warm up some vegetable oil in a big pan over low-to-medium heat. Toss in the minced garlic and cook for about 10 seconds till it smells amazing.
04 - Turn up the heat to medium-high. Add the bok choy and pour in the water. Keep stirring until the greens become tender, which takes around 2 to 4 minutes.
05 - Drizzle the spicy sauce over the cooked vegetables, toss it all together, take off the heat, and serve.

# Notes:

01 - Bok choy can be swapped for other types of Asian greens.
02 - If you want to skip alcohol, use chicken broth instead of wine.
03 - Feel free to adjust the chili oil to make it spicier or milder.
