Spicy Garlic Noodles (Print Version)

# Ingredients:

01 - 4 oz of thick wheat noodles.
02 - 3 tablespoons of a neutral-tasting oil.
03 - 3 cloves of garlic, finely chopped.
04 - 1 tablespoon of Sichuan chili flakes.
05 - 1 green onion, chopped (keep white and green parts separate).
06 - 1/2 tablespoon of light soy sauce.
07 - 1/2 teaspoon of darker soy sauce.
08 - 1/2 teaspoon of Chinese black vinegar or rice vinegar.
09 - 1/4 teaspoon of granulated sugar.
10 - 1/4 teaspoon of salt or chicken-flavored bouillon powder.
11 - Optional: cilantro to top it off.
12 - Optional: extra green onions as garnish.
13 - Optional: sesame seeds, toasted, for garnish.

# Instructions:

01 - Cook the noodles based on the instructions on the package. If you're serving this cold, rinse them in cold water once they're cooked.
02 - On top of the noodles, place the minced garlic, chili flakes, white parts of the green onion, both soy sauces, vinegar, salt, and sugar.
03 - In a saucepan, heat the oil until it's sizzling and very hot.
04 - Pour the hot oil over the noodles and toppings. Stir everything so the noodles are well coated. Sprinkle on your choice of garnishes, then dig in.

01 - Serve it hot or chilled, your call.
02 - Boost it with some protein or veggies if you'd like it more filling.
03 - Too much heat? Sugar can tone things down.
