Jalapeno Hot Sauce (Print Version)

# Ingredients:

01 - 4-5 large or 8 medium jalapeno peppers (about 8 ounces), finely chopped
02 - 1 ounce of chopped garlic
03 - 1 ounce of diced white onion
04 - 1/4 teaspoon of salt
05 - 1/4 cup of freshly squeezed lime juice
06 - 1/2 cup of white vinegar

# Instructions:

01 - Toss everything into a blender or food processor. Blend until there’s no chunks left and it’s silky.
02 - Pour the blended mix into a small saucepan. Heat on low and let it simmer for about 10 minutes, stirring gently. Keep the heat low to maintain the color. Allow it to cool a bit afterward.
03 - Give it a taste and tweak the salt or lime juice if needed. If you prefer, strain it to make it extra smooth.
04 - Transfer into clean bottles. Let it sit for a day to bring out the flavors before you dig in.

01 - Unstrained, this will make roughly 1.5 cups of sauce.
