# Ingredients:

01 - 2 medium apples for baking, peeled and diced.
02 - ½ cup packed brown sugar.
03 - 2 heaping teaspoons of ground cinnamon.
04 - 1 teaspoon powdered ginger.
05 - 1 large egg, brought to room temperature.
06 - ⅓ cup regular white sugar.
07 - ¼ cup neutral cooking oil.
08 - ¼ cup sour cream (full fat, room temp).
09 - 2 teaspoons pure vanilla extract.
10 - 1 cup plain all-purpose flour.
11 - 1 teaspoon baking soda.
12 - ½ teaspoon coarse kosher salt.
13 - 1 cup sifted powdered sugar.
14 - 1 teaspoon pure vanilla extract.
15 - 3 tablespoons milk.

# Instructions:

01 - Turn your oven to 350°F and grease a loaf pan with cooking spray or cake-release spray.
02 - Toss chopped apples, brown sugar, cinnamon, and ginger in a medium bowl, then set aside for later.
03 - In a big bowl, whisk the egg with granulated sugar, oil, sour cream, and vanilla extract until smooth.
04 - In another bowl, combine the flour, salt, and baking soda. Gently mix with the wet mixture until just combined.
05 - Mix three-fourths of the apple-cinnamon blend into the batter, pour into your greased loaf pan, and add the reserved apple mixture on top.
06 - Bake it for 50-55 minutes, or until the inside reaches 200°F.
07 - Let the loaf cool in the pan for about 30 minutes before slicing or serving.
08 - Whisk milk, powdered sugar, and vanilla in a small bowl until smooth. Adjust the thickness by adding more powdered sugar, if needed.
09 - Drizzle the sweet glaze over the loaf just before serving.
