# Ingredients:

01 - 5 garlic cloves, finely chopped.
02 - 3 tablespoons chilled water.
03 - 1 teaspoon cornstarch (or try potato or tapioca starch).
04 - 2 teaspoons sesame oil.
05 - 1/2 tablespoon soy sauce.
06 - 1 tablespoon rice vinegar (apple cider or white vinegar works too).
07 - 1/4 teaspoon ground black pepper.
08 - 1/2 teaspoon salt.
09 - 3/4 teaspoon garlic powder.
10 - 2 teaspoons neutral oil like vegetable oil.
11 - 1/4 cup honey (swap with brown sugar, maple syrup, or light corn syrup if needed).
12 - 4 chicken thighs, bone-in and skin-on (skinless and boneless are okay too).

# Instructions:

01 - Flip the chicken over so the bone faces up. Use a sharp small knife to carefully carve along the bone until you can pull it out smoothly.
02 - Use paper towels to press and dry both sides of the chicken pieces.
03 - Rub salt, garlic powder, and black pepper all over the thighs. Put them aside for now.
04 - Mix together the sauce ingredients from the list in a small bowl, then set it within reach.
05 - Heat oil over medium heat in a big frying pan. Start frying with the skin side down until it becomes golden and crispy (about 4-5 min). Flip them and cook for 2 more minutes or until the chicken’s internal heat reaches 165°F.
06 - Turn down the heat to medium-low. Pour the sauce around the chicken in the pan and let it bubble until it thickens. Flip the chicken (skin-side down) into the sauce for a quick 15 seconds, then flip it back.
07 - Optionally sprinkle chopped green onions on top. Move the chicken to a board, slice it into smaller pieces, and enjoy it while it’s still warm.
