Tangy Sumac Soaked Onions (Print Version)

01 - 1 big red onion, cut into thin slices
02 - 2 teaspoons sumac
03 - 1/2 teaspoon salt
04 - 1 tablespoon red wine vinegar or lemon juice
05 - 1 tablespoon extra virgin olive oil
06 - 1 tablespoon chopped fresh parsley

# Instructions:

01 - Take a medium bowl and throw in your thin onion slices with the salt and sumac. Now get your hands dirty and gently rub the spices into the onions for about half a minute to a minute until they're totally covered.
02 - Drizzle in the olive oil and vinegar, then toss in the parsley. Stir everything well, put a cover on the bowl, and let it sit for at least 20 minutes so the flavors can blend together.
03 - These tasty sumac onions are now ready to eat! They'll make your burgers, wraps, sandwiches, or salads taste amazing. You can keep them in the fridge for up to four days in a sealed container if you don't use them all at once.

# Notes:

01 - The longer they sit, the softer your onions will get. Just pour off extra liquid before you use them.
02 - Try using mint or cilantro instead of parsley for a completely different flavor.
03 - White or yellow onions work too but add a tiny bit of sugar since they aren't as naturally sweet as red ones.
