Pop bacon in freezer to make it easier to cut. Chop potatoes into cubes and soak them in water so they don't turn brown.

Pour oil into a big skillet over medium-high heat. Drain water from potatoes, toss them in the pan, sprinkle with salt, pepper, and Old Bay. Cook for 10 minutes, turning them often.

Throw chopped bacon in with your potatoes. Let it cook 5-6 minutes until it gets crispy, and the fat helps cook your potatoes more.

Turn heat down to medium-low, toss in garlic and parsley. Let them cook till you can smell them, about a minute.
