Bacon Maple Morning Potatoes (Print Version)

# Ingredients:

→ Base

01 - 3 average-sized gold potatoes with peels left on
02 - 2 strips bacon
03 - 1 tablespoon olive oil, with extra on standby

→ Seasonings

04 - 1-2 fresh garlic cloves, finely chopped
05 - 1 tablespoon real maple syrup
06 - Salt as needed
07 - Fresh ground black pepper as needed
08 - Old Bay seasoning as needed
09 - Fresh parsley for topping

# Instructions:

01 - Pop bacon in freezer to make it easier to cut. Chop potatoes into cubes and soak them in water so they don't turn brown.
02 - Pour oil into a big skillet over medium-high heat. Drain water from potatoes, toss them in the pan, sprinkle with salt, pepper, and Old Bay. Cook for 10 minutes, turning them often.
03 - Throw chopped bacon in with your potatoes. Let it cook 5-6 minutes until it gets crispy, and the fat helps cook your potatoes more.
04 - Turn heat down to medium-low, toss in garlic and parsley. Let them cook till you can smell them, about a minute.
05 - Pour maple syrup over everything, cook one more minute till it gets sticky. Grab a plate and serve hot with a runny egg on top.

# Notes:

01 - Red potatoes work fine too
02 - You can double or triple this no problem
03 - Need extra oil if you're using turkey bacon
