Chicken Pesto Italian Panini (Print Version)

# Ingredients:

β†’ Base

01 - 4 thick pieces of Italian bread
02 - 1 cooked chicken breast, cut in half along its length

β†’ Spreads & Fillings

03 - 2 tablespoons basil pesto
04 - 2 tablespoons thinly cut red onion
05 - ΒΌ cup sliced roasted red peppers
06 - 4 ounces part skim mozzarella, low moisture

β†’ For Cooking

07 - Non-stick spray

# Instructions:

01 - Smear a good amount of pesto on two bread slices.
02 - Place half a chicken breast on each pesto-covered slice, then add some onion, peppers, and cheese before closing with remaining bread.
03 - Warm up your panini press and give it a light coat of cooking spray.
04 - Place sandwiches on the grill for about 3-4 minutes each side until warm throughout with melted cheese.
05 - Slice sandwiches down the middle and enjoy while warm.

# Notes:

01 - Any leftover chicken works fine
02 - Thicker bread needs longer cooking
