Thai Dumpling Soup (Print Version)

# Ingredients:

01 - 20 dumplings or potstickers.
02 - 1 tablespoon of cooking oil.
03 - 4 cloves of garlic, finely grated.
04 - 1 teaspoon of fresh ginger, grated.
05 - 4 cups of stock made from chicken.
06 - 1 can of unsweetened coconut milk (14 oz).
07 - 1 tablespoon soy sauce (low sodium).
08 - 1 tablespoon fish sauce for flavor.
09 - 1 teaspoon of toasted sesame oil.
10 - 3 tablespoons red curry paste (Thai-style).
11 - 1 teaspoon of brown sugar.
12 - 2 tablespoons fresh lime juice.
13 - Chopped green onions for topping.

# Instructions:

01 - Add salt to a big pot of water, then bring it to a boil. Grate ginger and garlic ahead of time.
02 - Warm oil over medium heat in a pot. Cook ginger and garlic for 30 seconds, then mix in the stock, coconut cream, sauces, sesame oil, curry paste, sugar, and lime juice. Let it bubble gently for 5 minutes.
03 - Boil the dumplings for around 2-3 minutes following the instructions on the packaging. Drain when done.
04 - Spoon dumplings into bowls and pour steaming soup over them. Top with green onions and any extra veggies if you'd like.
