Fluffy Peanut Mousse (Print Version)

# Ingredients:

01 - Softened vegan cream cheese (about 1/3 cup).
02 - Maple syrup for sweetening (3 tablespoons).
03 - Peanut butter that's smooth (3/4 cup).
04 - A splash of vanilla extract (1 teaspoon).
05 - A tiny pinch of salt (1/4 teaspoon).
06 - Vegan whipped cream (1 1/2 cups and a bit extra for the top).
07 - Melted coconut oil (1/4 cup).
08 - Cacao powder (1/4 cup).
09 - Maple syrup for ganache (1/4 cup).
10 - Ganache vanilla extract (1/2 teaspoon).
11 - Just a pinch of salt for ganache.
12 - Some chocolate shavings to sprinkle on top.
13 - Crushed peanuts for decoration.

# Instructions:

01 - Blend peanut butter, maple syrup, cream cheese, vanilla, and a bit of salt till everything's smooth and creamy.
02 - On medium speed, whisk vegan whipped cream for about 5 mins until it gets light and airy.
03 - Stir cacao powder, maple syrup, melted coconut oil, vanilla, and a pinch of salt till you get a silky consistency.
04 - In jars, alternate layers of mousse and ganache if using. Finish with whipped cream and your favorite toppings.

# Notes:

01 - Store it in the fridge up to 24 hours in advance.
02 - It's better to portion it before chilling.
