Velvet Coconut Cookie Treats (Print Version)

# Ingredients:

01 - 3/4 cup granulated sugar.
02 - 1/2 cup white chocolate chips.
03 - 1 large egg.
04 - 1/4 cup unsweetened cocoa powder.
05 - 1/4 teaspoon salt.
06 - 1 tablespoon red food coloring.
07 - 1/2 cup shredded coconut.
08 - 1 teaspoon vanilla extract.
09 - 1 1/2 cups all-purpose flour.
10 - 1 teaspoon baking powder.
11 - Sugar syrup for coating.
12 - 1/4 cup buttermilk.
13 - 1/2 cup unsalted butter, softened.

# Instructions:

01 - Get the oven ready at 350°F and cover your baking tray with parchment paper.
02 - Stir together the flour, salt, cocoa powder, and baking powder.
03 - Whip the butter and sugar on high until it looks nice and airy, about 2-3 minutes.
04 - Stir in the egg, vanilla, and food coloring till smooth.
05 - Add the dry mix and buttermilk bit by bit, alternating between them.
06 - Let the dough rest in the fridge for about 30 minutes.
07 - Shape balls of dough, press in some chocolate, seal them up, and roll them smooth.
08 - Pop them in the oven for 10–12 minutes, just until the edges are firm.
09 - While warm, brush them with syrup and roll in coconut.

# Notes:

01 - They taste extra good if served while still warm.
02 - You can make and store the dough ahead of time.
03 - For best results, use finely shredded coconut.
