Peel the potatoes after washing and drying them. Cut them into thick chunks, about 3/4 inch wide and 3 inches long.

Place potatoes over a pot of simmering water to steam for around 10-12 minutes. Stop when they’re tender enough for a knife to go through without falling apart. Coat them lightly with olive oil.

Spread fries evenly across a baking tray. Bake at 450°F for about 20-25 minutes. Turn the tray halfway for even cooking.

Melt butter, stir in flour, and slowly add milk to avoid clumps. Stir until smooth, then mix in shredded cheese until completely melted.

Sprinkle Cajun spice on the baked fries. Drizzle warm cheese sauce and a bit of ranch dressing on top. Serve extra sauces on the side for dipping.
