Louisiana Fries (Print Version)

# Ingredients:

01 - Medium russet potatoes (6).
02 - 2 tablespoons olive oil, extra virgin.
03 - 1-2 tablespoons Cajun spice blend.
04 - A quarter cup of ranch, plus more for dipping.
05 - 2 tablespoons of butter.
06 - 2 tablespoons plain flour.
07 - 2/3 cup milk.
08 - 2 cups cheddar cheese, shredded.

# Instructions:

01 - Peel the potatoes after washing and drying them. Cut them into thick chunks, about 3/4 inch wide and 3 inches long.
02 - Place potatoes over a pot of simmering water to steam for around 10-12 minutes. Stop when they’re tender enough for a knife to go through without falling apart. Coat them lightly with olive oil.
03 - Spread fries evenly across a baking tray. Bake at 450°F for about 20-25 minutes. Turn the tray halfway for even cooking.
04 - Melt butter, stir in flour, and slowly add milk to avoid clumps. Stir until smooth, then mix in shredded cheese until completely melted.
05 - Sprinkle Cajun spice on the baked fries. Drizzle warm cheese sauce and a bit of ranch dressing on top. Serve extra sauces on the side for dipping.

# Notes:

01 - Be careful not to over-steam the potatoes so they hold their shape.
02 - Start with a little Cajun spice and add more based on your preference.
03 - Dipping sauces served separately keeps the fries crispy longer.
