Cranberry Feta Dip (Print Version)

# Ingredients:

01 - Fresh thyme to decorate.
02 - 1-2 tablespoons of honey, to taste.
03 - ¼ cup chopped pistachios.
04 - 2 tablespoons of olive oil.
05 - ¼ teaspoon of chili flakes.
06 - ½ cup plain Greek yogurt.
07 - 225g (8oz) feta cheese.
08 - ¼ teaspoon ground nutmeg.
09 - Zest and juice of 1 orange.
10 - ¼ cup maple syrup.
11 - 2 cups of fresh or frozen cranberries.

# Instructions:

01 - Stir cranberries, maple syrup, nutmeg, orange juice, and zest in a pot. Heat to boil, then lower to medium-low, cooking 6-10 minutes until thickened.
02 - Mix olive oil, yogurt, feta, and chili flakes in a food processor. Process until it’s soft and fluffy.
03 - Let the cranberry mix sit until it cools down fully.
04 - Spread whipped feta in a serving bowl. Spoon cranberries on top, sprinkle pistachios, drizzle honey, and finish with thyme.

# Notes:

01 - Keep the components in the fridge for up to 2 days before using.
02 - You can swap feta with ricotta if preferred.
