Chicken Gnocchi Slow Cooker (Print Version)

# Ingredients:

01 - 1 pound potato gnocchi
02 - 1½ pounds chicken thighs or breasts, without bones and skin

→ Vegetables

03 - 3 cups fresh baby spinach
04 - ½ medium white or yellow onion, diced
05 - 1-2 sticks of celery, finely chopped
06 - 3-4 medium carrots, peeled and diced
07 - 4-5 garlic cloves, minced small

→ Seasonings & Liquids

08 - 1 cup half and half or cream
09 - 4 cups chicken stock, low-sodium preferred
10 - Pinch of chili flakes (optional)
11 - Salt and ground black pepper as needed
12 - 1 teaspoon chicken bouillon paste, optional
13 - 2 tablespoons chopped fresh parsley
14 - 1 tablespoon classic Italian seasoning blend
15 - 1-2 tablespoons cornstarch to thicken

→ For Serving

16 - 4 crispy bacon slices, crumbled (optional)

# Instructions:

01 - Place your chicken in the crockpot along with the onion, garlic, parsley, carrots, celery, and other seasonings. Pop in the bouillon and chili flakes if you're using them.
02 - Pour in the chicken broth, stir to combine everything, cover it up, and let it simmer—either 6-8 hours on low or about 4 hours on high.
03 - Once cooked, grab two forks to pull apart the chicken into smaller pieces, right in the pot.
04 - Mix the cream and cornstarch in a small bowl, then pour it into the crock. Toss in the gnocchi and spinach, and turn to high for 30-45 minutes.
05 - If you'd like it thicker, stir in a touch more cornstarch mixed with cold water. Taste to see if you need more seasoning.
06 - Spoon it into bowls and sprinkle crumbled bacon on top if you'd like.
