Asian Cod Ginger Glaze (Print Version)

# Ingredients:

→ Base

01 - 4 pieces of cod (about 6 ounces each)

→ Sauce

02 - 1/4 cup tamari sauce
03 - 2 tablespoons natural sweetener
04 - 2 tablespoons mild rice vinegar
05 - 1 tablespoon ginger root, freshly grated
06 - 2 garlic cloves, finely chopped
07 - 1 tablespoon toasted sesame oil

→ Toppings & Sides

08 - 2 scallions, cut into thin rings
09 - 1 tablespoon toasted sesame seeds
10 - Handful of cilantro, roughly chopped
11 - Wedges of fresh lime

# Instructions:

01 - Turn your oven on to 400°F (200°C). Put some parchment on your baking tray so the fish won't stick to it.
02 - Grab a small bowl and stir together the tamari, sweetener, rice vinegar, grated ginger root, chopped garlic, and sesame oil until everything's mixed well.
03 - Lay out your cod pieces on your lined tray. Brush a good amount of your sauce mixture over each piece of fish.
04 - Stick the tray in your hot oven for about 12-15 minutes. You'll know the fish is ready when it breaks apart easily with a fork.
05 - Move the cooked fish to plates. Scatter some scallion rings, sesame seeds, and cilantro on top. Put lime wedges on the side for squeezing over your fish.

# Notes:

01 - Always go for fresh cod for the tastiest results.
02 - You can let the fish sit in the sauce for 15-30 minutes before cooking if you want stronger flavor.
03 - This goes really well with a side of rice or some roasted veggies.
04 - You can keep any extras in a sealed container in your fridge for up to 2 days.
