Cheese Straws (Print Version)

# Ingredients:

01 - 1¾ cups self-rising flour (228g).
02 - 8 ounces freshly grated sharp cheddar cheese.
03 - 1-4 tablespoons water, as you go.
04 - ½ teaspoon smoked or sweet paprika.
05 - ½ cup room-temperature unsalted butter.
06 - ¼ teaspoon kosher salt.
07 - ¼ teaspoon cayenne pepper.

# Instructions:

01 - In a bowl, toss together flour, cayenne, salt, and paprika until blended.
02 - Whip the softened butter and shredded cheese in a mixer on medium for a couple of minutes until creamy.
03 - Slow the speed, then mix in dry ingredients. Add water gradually until the dough feels soft like modeling clay, without being wet or sticky.
04 - Wrap the dough in plastic and set it aside while you preheat the oven to 350°F.
05 - Make long strips using a cookie press, or roll and slice into 2–3-inch pieces. Space them out on parchment-lined baking sheets.
06 - Pop them in the oven for 14–17 minutes until they're golden and firm. Let them cool all the way before handling.

# Notes:

01 - If you're out of self-rising flour, mix plain flour with 2 tsp baking powder and extra salt.
02 - Grating cheese fresh works way better than using pre-shredded cheese.
03 - Freezing the dough before popping it in the oven helps hold its shape.
