If your dates still have pits, take them out. Slice down the center to make a pocket, but don’t cut all the way through.

Cover a small tray or plate that fits in the freezer with parchment paper. Spread out each date, making pockets for the filling.

Scoop nut butter into the hole of each date until about three-quarters full. Add a few peanuts on top, then gently press the dates closed. Freeze for 15 to 20 minutes.

While the stuffed dates freeze, melt some chocolate. Let it cool off a little—it shouldn’t be too hot.

Take the dates out of the freezer and dip them into the melted chocolate until they’re fully coated. Use two spoons for dipping if it’s easier, or just drizzle the chocolate instead.

Sprinkle salt on top, then stick the dates back in the freezer for 20 to 30 minutes so the chocolate can firm up.
