Blend fresh fruit into a smooth puree if you're using whole fruit. Pour it into a large spouted bowl or measuring cup. Mix in honey if you want it sweeter.

In a small pot, warm the juice over low-medium heat. Sprinkle in the gelatin and whisk non-stop as it heats. Let it warm gently for around 3 minutes, just until the gelatin melts fully and the liquid turns clear or cloudy.

If you're using fruit puree, stir the warm gelatin-juice blend into it. Whisk it all until every bit mixes smoothly.

Put a silicone mold on a baking tray, or use an 8x8 glass pan. Carefully pour the mixture into the molds or pan. Don’t overfill. Freeze it for 15 minutes for faster firming.

Take the molds out of the freezer and remove the gummies. Keep them in a container in the fridge, where they’ll stay fresh for up to two weeks.
