Set your oven to 400°F (200°C). Cover a large sheet pan with parchment.

Cut the cauliflower heads into six slices, about 3/4 inches thick each.

Sprinkle shredded parmesan onto the sheet pan, and place the cauliflower slices over it.

Combine the oil, salt, pepper, and onion powder. Spread it over the cauliflower using a brush.

Roast for 20 minutes until they soften.

Sprinkle gruyere over the cauliflower and bake for another 10-15 minutes until bubbling.

Add freshly chopped chives on top before serving.
