Goat Cheese & Strawberry Toast (Print Version)

# Ingredients:

→ Base

01 - One loaf of French bread, cut diagonally into slices
02 - A tablespoon of olive oil

→ Toppings

03 - Four ounces of goat cheese
04 - Two cups of fresh strawberries, sliced up
05 - Two teaspoons of grated lemon peel

→ Balsamic Glaze

06 - One cup of balsamic vinegar
07 - A quarter cup of brown sugar

# Instructions:

01 - Set your oven to 325°F. Use olive oil to coat one side of the bread slices, then lay them on a baking sheet. Pop them in the oven for 2 to 3 minutes until slightly crispy.
02 - Mix the balsamic vinegar and brown sugar in a small pot over medium heat until it starts boiling. Turn the heat down low and let it simmer for 15–20 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon. Let it cool down after.
03 - Whip up the goat cheese in a stand mixer fitted with a whisk attachment until it’s smooth and airy. Gently stir in the lemon zest when it’s ready.
04 - Spread the fluffy goat cheese over the toasted bread slices. Layer the strawberry slices on top and give it all a drizzle of your cooled balsamic glaze.
